Spicy Red Quinoa Salad

 

Total Prep Time: 30 minutes

Serving: 6 servings

 

Ingredients:

 

Salad Dressing

  • ¼ cup olive oil
  • 1 ½ lime
  • 1 garlic clove (minced)
  • ½ tsp cumin
  • ¼ tsp cayenne pepper
  • ¼ teaspoon salt

Quinoa Salad

  • 1 cup red quinoa
  • 2 cup of water
  • Olive oil
  • 1 cup canned for frozen corn
  • Salt and pepper
  • 1 15 oz can of black beans
  • ½ diced red bell pepper
  • 1 diced scallion
  • ½ cup fresh cilantro
  • ½ jalapeno
  • Avocado

How to do it:

Salad Dressing

1. Mix all ingredients in a large bowl.

Quinoa Salad

1. Mix quinoa and water and bring to a boil. Cover.
2. Reduce heat to low and simmer for 15 minutes.
3. Turn off heat and let sit with the cover for 5 minutes before you fluff with a fork.
4. While waiting for the quinoa, saute the cord. Drizzle with olive oil. Add corn, salt, and pepper. Cook for 12-15 minutes until corn is tender, and the kernel becomes slightly brown. Remove corn from heat.
5. Add the cooked quinoa and sauteed corn with your salad dressing. It is mixed thoroughly.
6. Add the remaining ingredients and toss well.
7. Top with avocado and cilantro.

Turmeric Spiced Quinoa

Total Prep Time: 28 minutes

Servings: 4 servings

Calories: 257 calories/serving

Ingredients:

  • 1 cup quinoa
  • 2 tbsp vegetable oil
  • 1 chopped onion
  • Minced garlic (2 cloves)
  • 1 tsp cumin seeds
  • 1tsp mustard seeds
  • ½ tsp ground turmeric
  • 2 cups of water
  • 1 tsp salt
  • ½ cup of frozen green peas
  • ½ cup grape tomatoes
  • 2 tbsp lemon juice

How to do it:

1. Rinse quinoa. Drain and set aside.
2. Heat vegetable oil in a medium-size saucepan.
3. Fry the onion, garlic, cumin seeds, and mustard seeds for around 2 minutes.
4. Add quinoa and ground turmeric. Stir well.
5. Add 2 cups of water and bring to a boil. Add salt.
6. Cover the saucepan and reduce heat—Cook for 12 minutes.
7. Add frozen green peas. Cover and continue to cook for 3 to 4 minutes until all the water is absorbed.
8. Turn off heat.
9. Add tomatoes and lemon juice. Stir well.

Spicy Quinoa and Black Beans

Total Prep Time: 40 mins

Servings: 4 servings

Ingredients:

  • 1 diced onion
  • 1 diced red bell pepper
  • Minced garlic (2 cloves)
  • 1 tbsp extra virgin olive oil
  • ¾ cup rinsed quinoa
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 1.5 cups chicken or vegetable broth
  • 1 cup of frozen corn
  • 3 cups cooked black beans
  • ½ cup chopped fresh cilantro
  • Sour cream, shredded cheese, avocado, hot sauce, limes, etc. (optional)

How to do it:

1. Saute onion and bell pepper using 1 tbsp olive oil in a large pot.
2. Add garlic and saute for 1 minute.
3. Add quinoa, cumin, cayenne pepper, salt, and pepper. Stir to coat.
4. Add chicken or vegetable broth, bring to a boil, and cover.
5. Reduce heat to low and simmer for 20 minutes.
6. Add frozen corn, black beans, and cilantro and continue cooking for 5 more minutes.
6. Serve and add toppings.

Mexican-Spiced Vegetable Quinoa

Total Prep Time: 35 minutes

Servings: 8 servings

Ingredients:

  • 1 tbsp olive oil
  • Minced garlic (2 cloves)
  • ¼ cup diced red onion
  • 1 ½ cups uncooked quinoa
  • 1 minced jalapeno
  • 1 cup bell pepper
  • 1 cup zucchini
  • 1 cup black beans
  • 14.5 ounces diced tomatoes
  • 1 cup corn kernels
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 ½ cups vegetable broth
  • 2 tbsp green onions

How to do it:

1. Heat olive oil in a skillet over medium heat.
2. Add garlic and red onion and cook for 1 minute.
3. Add quinoa, jalapeno, bell pepper, zucchini, black beans, tomatoes, corn, chili powder, cumin, salt, and broth. Still well.
4. Bring to a boil and reduce heat to low for around 20-25 minutes.
5. Turn off heat and allow it to sit for another 5 minutes.
6. Season with additional salt and pepper if needed.
