Garlicky Greek Chicken

 

Ingredients:

  • 3 tbsp extra-virgin olive oil
  • 2 lemons (1 sliced, 1 juiced)
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 lb. chicken thighs
  • Salt
  • Ground black pepper
  • ½ lb. asparagus
  • 1 zucchini

 

Instructions:

1. Combine 2 tbsp olive oil, lemon juice, garlic, and oregano in a large bowl. Combine well.
2. Add chicken thighs and toss to coat.
3. Cover the bowl with a plastic wrap and marinate it in the fridges for 15 minutes to 2 hours.
4. Preheat the oven to 425 degrees.
5. Place chicken in a large ovenproof skillet and cook over medium-high heat.
6. Season both sides of chicken with salt and pepper.
7. Add chicken skin-side-down and add the remaining marinade.
8. Sear for 10 minutes until chicken skin is golden and crispy.
9. Transfer the pan to the oven and cook for 15 minutes.

Keto Quesadillas

 

Ingredients:

  • 1 tbsp. extra -virgin olive oil
  • 1 bell pepper, sliced
  • ½ yellow onion, sliced
  • ½ tsp. Chili powder
  • Salt
  • Ground black pepper
  • 3 cups shredded cheddar
  • 4 cups shredded chicken
  • 1 avocado
  • 1 green onion
  • Sour cream

Instructions:

1. Preheat the oven to 400º and line two medium baking sheets with parchment paper.
2. Heat oil in a medium skillet over medium-high heat.
3. Add pepper, onion, chili powder, salt, and pepper.
4. Cook for 5 minutes. Transfer to a plate.
5. Stir together the cheeses in a medium bowl.
6. Add 1 ½ cups of cheese mixture into the center of the baking sheets you prepared
7. Spread into an even layer and shape into a circle, with the same size of a flour tortilla.
8. Bake cheeses for 8 to 10 minutes.
9. Add onion-pepper mixture, shredded chicken, and avocado slices to one half of each.
10. Let cool slightly, use the parchment paper and a small spatula to lift and fold one side of the cheese “tortilla” over the side with the fillings.
11. Return to the oven for 3 to 4 minutes more.
12. Cut each quesadilla into quarters.
13. Garnish with green onion and sour cream before serving.

Chicken Roast

 

Ingredients:

  • 3 ½ pound chicken
  • Salt
  • Ground black pepper
  • 1 yellow onion
  • 3 medium carrots
  • 2 stalks celery
  • ½ lb. baby potatoes
  • 1 head garlic
  • 1 tbsp. Melted butter
  • 1 lemon
  • 1 bunch fresh thyme

Instructions:

1. Season chicken with salt and pepper.
2. Tie the legs together and tuck the wing tips under the body of the chicken. You can place it in the fridge for an hour or let it sit overnight.
3. Preheat the oven to 425º.
4. Use a 9”-x-13” baking dish with onion, carrots, celery, potatoes, and garlic and toss together with oil and 1 teaspoon salt.
5. Place chicken on top.
6. Brush melted butter all over the chicken and stuff cavity with lemon and most of the thyme, reserving a couple of sprigs for garnish.
7. Roasting until juices run clear and a meat thermometer inserted into the center of the thigh reads 165º for around 50 minutes to 1 hour.
8. Tent chicken with foil.
9. Let rest 15 to 20 minutes before transferring to a cutting board.
10. Serve chicken with roasted vegetables.

Keto Chicken Salad

 

Ingredients:

  • ½ cup mayonnaise
  • 1 tbsp. Mustard
  • 1 tbsp. Red wine vinegar
  • 1 small shallot
  • 1 stalk celery
  • 1 tsp. Dried oregano
  • Salt
  • Ground black pepper
  • Crushed red pepper flakes
  • 3 cups shredded cooked chicken
  • 4 strips bacon, cooked and crumbled
  • 1 avocado
  • Butterhead lettuce, for serving

Instructions:

1. Combine mayonnaise, mustard, red wine vinegar, shallot, and celery in a medium bowl.
2. Add oregano, salt, pepper, and a pinch of red pepper flakes.
3. Fold in chicken, bacon, and avocado.
4. Serve in butterhead lettuce.

Buffalo Keto Chicken Tenders

 

Ingredients:

  • 1 cup chicken breast tenders
  • 1 cup almond flour
  • 1 egg (large)
  • 1 tbsp heavy whipping cream
  • 6 oz buffalo sauce (pre-made)
  • Salt
  • Pepper

Instructions:

1. Preheat the oven to 350 degrees.
2. Season the chicken tenders using salt pepper.
3. Season the almond flour with salt and pepper as well.
4. Beat the egg together with the heavy cream.
5. Dip each chicken tender in the egg and massive cream mixture.
6. Using a Tupperware or Ziploc bag, place the tenders along with the seasoned almond flour—sake to coat.
7. Place the tenders in the lightly greased baking sheet.
8. Bake for 30 minutes.
9. Allow tenders to cool for 5 minutes.
10. Combine it with the buffalo sauce.
