Mexican Rice Casserole Recipe

Ingredients:

  • Two tbsp canola oil
  • Three cloves minced garlic
  • One chopped large onion
  • 4 cups of rice
  • Two 14.5-ounce can whole tomatoes
  • One 10-ounce can diced tomatoes and green chilies
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp ground black pepper
  • ½ tsp cayenne pepper
  • ¼ tsp turmeric
  • 6-8 cups low sodium chicken broth
  • One and ½ cups grated Cheddar
  • Fresh cilantro

How to do it:

1. Preheat the oven to 375 degrees Fahrenheit.

2. Heat the oil and add garlic and onions. Cook for 3-4 minutes.

3. Reduce the heat and add rice. Stir cumin, salt, pepper, cayenne, and turmeric. Combine and cook for 2 minutes.

4. Add whole tomatoes, diced tomatoes, cumin, salt, pepper, cayenne, and turmeric. Combine and cook for 2 minutes.

5. Add the chicken broth and stir.

6. Let it boil and reduce to low heat.

7. Cover and simmer for around 10-15 minutes.

8. Top wot cheese then bake for about 15 minutes.

9. Serve with the cilantro on top.

Classic Chicken and Rice Recipe

Ingredients:

  • 2 tbsp canola oil
  • 4 to 6 bone-in, skin-on chicken thighs
  • ½ teaspoon paprika
  • Salt
  • Ground black pepper
  • Four medium black carrots
  • Three stalks celery
  • Two large shallots
  • Two cloves minced garlic
  • 1 tbsp thyme leaves
  • 1 tbsp oregano leaves
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup long-grain rice
  • 4 cups low-sodium chicken stock
  • 1 tbsp chopped fresh chives

How to do it:

1. Preheat the boiler.

2. Heat 1 tbsp of oil in a large skillet using a medium to high heat.

3. Mix the chicken, paprika, 1 tbsp of salt, and pepper in the bowl.

4. Place the chicken in the skillet on its skin-side and let it stay until the skin is golden.

5. Remove the chicken.

6. Add the remaining 1 tbsp to the skillet.

7. Add the carrots, celery and shallots then stir for 4-5 minutes.

8. Add the garlic, thyme, oregano, lemon zest, lemon juice, and salt pepper until you smell the garlic.

9. Stir the rice and cook undisturbed for 2 minutes.

10. Pour the broth and add salt.

11. Add chicken with the thighs on the pan.

12. Bring it to boil for 15 to 20 minutes.

Sweet and Spicy Ham Fried Rice Recipe

Ingredients:

  • 2 tbsp vegetable oil
  • One large egg
  • 1 cup diced ham
  • ½ cup sliced stemmed shiitakes
  • ½ cup diced red bell pepper
  • 1 tbsp Asian sweet chili sauce
  • 1 tsp finely grated fresh ginger
  • 1 tsp soy sauce
  • Salt
  • 3 cups cooked long-grain white rice
  • 1 to 1 ½ teaspoon Asian chili oil
  • 2 tbsp chopped scallions

How to do it:

1. Heat the skillet over high heat and add the oil.

2. Add the egg and swirl until it covers the whole pan. Wait for 10 seconds before taking it out.

3. Add the remaining oil, ham, shiitakes, and cook. Stir constantly.

4. Add the remaining ingredients for 2 minutes.

5. Add the rice and cook for around 3 minutes.

6. Add the egg and mix thoroughly.

Turkey Fajita Rice Bowls Recipe

Ingredients:

  • 1 cup basmati rice
  • Salt
  • Two bell peppers (1 red, one yellow)
  • One large white onion
  • 3 tbsp extra-virgin olive oil
  • Freshly ground pepper
  • 1 ½ pounds turkey cutlets (about 6)
  • One tablespoon fajita seasoning
  • Juice of ½ lime
  • 1 cup fresh cilantro
  • One avocado
  • ½ cup sour cream
  • ½ cup pico de gallo or salsa

How to do it:

1. Preheat the grill.

2. Combine the rice, 3 cups of water and salt in a saucepan until it boils.

3. Cook for 18 minutes.

4. On the side, blend one of the bell peppers and onions.

5. Put olive oil to the remaining bell pepper. Add salt and pepper.

6. Mix the turkey, 1 tbsp olive oil, fajita seasoning, salt, and pepper.

7. Grill the onions and pepper then add lime juice.

8. Grill the turkey for around 2 to 3 minutes per side.

9. Puree the reserved bell pepper and onion using ¼ cup water, cilantro, and 1 tsp salt.

10. Fluff the rice in the bowl and add the cilantro puree.

11. Top with turkey, grilled vegetables, avocado, sour cream, and pico de gallo.

Bacon and Egg Fried Rice Recipe

Ingredients:

  • 2 tbsp oil
  • ¾ cup diced bacon or ham
  • ¾ cup diced white onion
  • Two cloves garlic, minced
  • ¼ cup diced carrots
  • ¼ cup snap peas, sliced, or other seasonal vegetables
  • Two large eggs, beaten
  • 4 cups cooked rice
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • Salt
  • Two chopped scallions
  • Freshly ground white pepper

How to do it:

1. Heat skillet or work on high heat.

2. Add 2 tbsp oil and bacon. Cook for 2 minutes.

3. Add onion, garlic, carrots, and snap peas and cook for around a minute.

4. Add egg then rice.

5. Press the rice into the egg, fold and repeat until it is completely coated.

6. Add soy sauce, oyster sauce, and salt.

7. Cook over high heat for 2-4 minutes.

8. Garnish with scallions and white pepper.
