Recipes that Bring Us to the Beach

 

Spicy Shrimp Rolls

 

What better recipe to start the list than a classic seafood dish? Shrimp rolls are the perfect form of sushi to make for people who are still relatively skeptical about eating sushi. This recipe is full of flavor and has a tiny kick that’ll get you going!

 

Ingredients

  • 12 oz of farm-raised white shrimp with the shell still on
  • 2 cups of sushi rice/short grain rice
  • 1 teaspoon of sriracha
  • ½ teaspoon of Japanese allspice/7 spices
  • ½ teaspoon of Masago
  • Salt
  • Paprika
  • Lemon juice
  • Mayonnaise
  • Nori

 

Dish Procedures

 

First, thaw your shrimp and bring a large pot of water to a boil. Once the water is boiling, add the shrimp and season it with some salt, paprika, and lemon juice dash. Cook the shrimp for 2 minutes and dump the shrimp directly into an ice bath as soon as they’re cooked.

 

Peel the shell off of the shrimp and start deveining them. Before you slice the shrimp, dry them with paper towels to absorb any excess water. Slice the shrimp into tiny pieces that are easy to roll. Next, put the shrimp in a bowl with the mayonnaise, sriracha, Japanese spice, and Masago. Make sure to mix it well!

 

Next, get your sushi mat and start layering your sushi, starting with half a sheet of nori and seasoned rice, then flip the sushi mat so that the nori is on the top and begin adding the shrimp in the center. Roll the whole ordeal and slice into bite-sized pieces!

 

Rocky Road Fudge

 

What’s more refreshing than having a fudge slab to enjoy with your friends after the day at the beach? Indulge in this delightful treat and share it with the rest of your family!

 

Ingredients

  • 1 can of sweetened condensed milk
  • 1 teaspoon of vanilla extract Salt
  • 1 and a half cups of chopped walnuts
  • 3 cups of mini marshmallows
  • 2 cups of chocolate chips (semi-sweet milk chocolate is perfect for this recipe)

 

Dish Procedures

 

First, line a 9-inch baking pan with lightly greased parchment paper or aluminum foil. Then, in a large bowl pour in the condensed milk and chocolate chips (you can use chopped chocolate bits as well). Place the pan in a microwave for 60-90 seconds on 70-90% power. Take the bowl out once it has melted but not sufficiently melted the rest of the chocolate to make sure it doesn’t get too hot and end up burning.

 

Stir in vanilla extract, nuts, and a pinch of salt and then fold in the marshmallows. Spread in the pan, you prepared earlier and let it chill overnight or for 5 hours, cut into squares, and enjoy!

 

Fish Tacos With Garlic And Lime Crema

 

The go-to meal to share with your family for a day at the beach. Nothing helps you reminisce about the beach more than fresh fish tacos with a lime-based sauce!

 

Ingredients

  • 1 and a half pounds of tilapia
  • ½ teaspoon of ground cumin
  • ½ f teaspoon of cayenne
  • 1 teaspoon of salt
  • ¼ teaspoon of pepper
  • Olive oil
  • Butter
  • Small white corn tortillas

 

Sauce Ingredients

  • ½ cup sour cream
  • ⅓ cup mayo
  • 2 tablespoon of lime juice
  • 1 teaspoon garlic powder
  • Sriracha

 

Procedures

 

First, in a small dish, combine the cayenne, cumin, salt, and pepper and season both sides of each tilapia. Drizzle with olive oil and a couple of butter and bake slices at 375 F for 20-25 minutes in a baking sheet lined with parchment paper.

 

Toast the tortillas and prepare the sauce by adding ingredients and whisking it well in a medium bowl. Assemble the tacos by adding in a hunk of fish, toppings, and vegetables of your choice and the fantastic crema!
