1. Spicy Sriracha Chicken Wings

 

Ingredients:

  • 5 kilos chicken wings
  • ¼ cup crushed coriander seeds
  • 1 tsp ground cumin seeds
  • 1 tsp cinnamon
  • 2 tbsp salt
  • ¼ cup virgin olive oil
  • ¾ cup Sriracha chile sauce
  • 12 tbsp melted butter
  • ½ cup chopped cilantro
  • Juice of 3 limes
  • 3 quarts vegetable oil

Instructions:

1. Mix the wings, coriander, cumin seeds, cinnamon, salt, and olive oil in a bowl.
2. Cover and refrigerate for at least 4 hours or overnight.
3. Preheat your oven to 375 degrees celsius.
4. Prepare rimmed baking sheets and spread the wings.
5. Roast for 30 minutes. If you don’t want to fry the wings, continue roasting for another hour.
6. Clean the bowl and add the Sriracha, butter, cilantro, lime zest, and juice.
7. In a saucepan, heat vegetable oil to 375 degrees Celcius.
8. Fry the wings in batches for about 5 minutes per batch.
9. Drain excess oil.
10. Add wings to the sauce until mixed well.
11. Serve

 

2. Spicy Apricot Wings

 

Ingredients:

  • ½ cup hickory, apple, or apricot wood chips
  • ½ cup apricot preserves
  • 2 tbsp Worcestershire sauce
  • 2 tbsp light brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp mustard
  • 1 tbsp salt
  • 2 tbsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1.2 tsp cayenne pepper
  • ¼ tsp ground ginger
  • 3 lbs. Chicken wings (wings cut in 2 pcs.)

Instructions:

1. Prepare the gas grill.
2. Wrap the wood chips using a foil and pierce with a skewer.
3. Place on the grill.
4. Cover and allow the wood chips begin to smoke in around 5 minutes.
5. Mix the apricot preserves with Worcestershire sauce, light brown sugar soy sauce, mustard, salt, black pepper, garlic powder, sweet paprika, cayenne, and ginger.
6. Transfer half of the mixture into a small bowl.
7. In a large bowl, add the chicken wings until well coated with the sauce.
8. Leave for 5 minutes.
9. Grill the chicken wings and cover over moderately high heat.
10. Turn occasionally until cooked for about 22 to 25 minutes.
11. Transfer the chicken and serve with the sauce you’ve set aside.

 

3. Chile-Garlic Chicken Wings

 

Ingredients:

  • 1 tbsp virgin olive oil
  • 4 cloves minced garlic
  • 1 cup tomato sauce
  • 3 tbsp chile-garlic sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 lb. chicken wings (cut in two pieces)
  • Salt
  • Black pepper
  • 1 cup all-purpose flour (for dredging)
  • Vegetable oil
  • Sliced green onions

Instructions:

1. Heat your pan over medium heat.
2. Add the olive oil and garlic.
3. Stir for 1 to 2 minutes until lightly browned.
4. Add the tomato sauce, chili-garlic sauce, soy sauce, rice vinegar, and brown sugar.
5. Reduce heat to low and allow the sauce to simmer until it thickened. Set aside.
6. Rinse the chicken and pat dry.
7. Season with salt and pepper before coating with flour. Shake any excess flour.
8. In a large pot or deep fryer, turn heat to 375 degrees Celsius.
9. Fry the chicken until golden brown for about 8 to 10 minutes.
10. Drain excess oil and continue frying in batches.
11. Add the chicken wings to the chile-garlic sauce and garnish with the onions.
12. Serve.

 

4. Jalapeño Chicken Wings

Ingredients:

  • ½ cup butter
  • 4 cloves minced garlic
  • ¼ cup finely minced pickled jalapeños
  • ¼ cup Tapatio hot sauce
  • ¾ cup ketchup
  • 1 tbsp brown sugar
  • 2 lbs. Chicken wings (cut into two pcs.
  • Salt
  • Black pepper
  • 1 cup all-purpose flour
  • Vegetable oil
  • Fresh sliced jalapeño (for garnish)
  • Lime wedges (for garnish)

Instructions:

1. Heat a saucepan over medium heat.
2. Add the butter until melted and add the garlic.
3. Stir for 1 to 2 minutes until the garlic is light brown.
4. Add minced jalapeños, hot sauce, ketchup, and brown sugar.
5. Reduce the heat to low and allow to simmer until the sauce thickened. Set aside.
6. Season with flour. Shake any excess flour.
7. In a large pot or deep fryer, turn heat to 375 degrees Celsius.
8. Fry the chicken until golden brown for about 8 to 10 minutes.
9. Drain excess oil and continue frying in batches.
10. Add the chicken wings in the jalapeño sauce and garnish with jalapeño slices and lime wedges.
11. Serve.
